Donna is primarily a cross-country ski racer, but dabbles in sprint length triathlons and some running races during the off-season. Even though she is a registered dietitian, her sweet tooth sometimes gets in the way of a healthy diet. To curb a tendency to overdo processed carbs, Donna uses stevia for sweeteners and eats fresh fruit daily.
An elite wave racer in the American Birkebeiner for the past 3 years, and again qualifying for the 2012 marathon skate, Donna is concentrating on building some core strength over the summer. Here is one day of what Donna ate on a light training day of yoga followed by a one-hour rode bike ride.
AM 2 coffee with half and half
Workout: yoga and 20 minutes of walking
Breakfast:
1 cup fat free cottage cheese and ½ pear
¼ cup Face 2% yogurt
Workout (late morning): one hour bike, few intervals uphill
Late Lunch
½ bagel and 1 hard boiled egg
Mixed green salad with 2 carrots
Italian dressing
Handful of dried cranberries
1 oz of feta cheese
Rake leaves for 2 hours
Sit doing computer work for several hours
Dinner:
4 oz red wine
5 oz of lemon flavored tuna fish
1 Babybel lite cheese round
1 cup cooked California blend vegetables
1 cup mixed baby greens
1 slice sourdough bread
1 cup 1% milk with sugar free chocolate flavor added
Snack:
¼ cup organic raisins
1 mango
2 small homemade chocolate chip and raisin cookies
